This savory black bean and sweet potato chili is a light and healthy recipe that will satisfy both vegetarians and meat lovers. Serves two.

Ingredients:

  • 2 tsp extra-virgin olive oil
  • 1 small onion, finely diced
  • 1 small sweet potato, diced
  • 2 cloves garlic, minced
  • 2 tsp ground cumin
  • 1/4 tsp ground chipotle
  • 1/8 tsp salt
  • 1 1/3 cups water or vegetable broth
  • 1 15-oz can black beans, rinsed
  • 1 cup canned diced tomatoes
  • 2 tsp lime juice
  • 2 tbsp fresh cilantro, chopped

Directions:

Heat olive oil in a large saucepan over medium-high heat. Stirring often, sauté onion and sweet potato in the oil about four minutes or until the onion is softened. Add garlic, chili powder, cumin, chipotle and salt. Cook and stir for one minute, then add water or broth. Bring everything to a simmer, then cover and reduce heat. Cook until potato is tender, about 10-15 minutes. Add beans, tomatoes and lime juice. Increase heat to high and return to a simmer, stirring frequently. Reduce heat and cook for another four to five minutes. Garnish with cilantro and serve.
